It occured to me the other day, that the "soul food" restuarant in my neighborhood isn't run by African Americans, Africans nor any person with African roots! How can this business be so successful?
I appreciate food businesses that bring their food into my neighborhood for me to enjoy when I'm in the mood for something different. But, I have an issue with an establishment cooking foods that appeal to me but they don't eat it themselves!!! Being from the southeastern part of the country, southern food is cooked by everybody and eaten by everybody as well.... If you didn't see the chef, you wouldn't know the difference... Some of the best fried chicken is cooked by women with blond hair and blue eyes. The cornbread and gravy with liver and onions are to die for. You can be sure, this is the same food in her home, and is served to her family. Next time you think of eating foods that target ethnic origin, be mindful of who is cooking it and why.
