DISCONNECT IN AN AFRICAN-AMERICAN NEIGHBORHOOD

It occured to me the other day, that the "soul food" restuarant in my neighborhood isn't run by African Americans, Africans nor any person with African roots! How can this business be so successful? I appreciate food businesses that bring their food into my neighborhood for me to enjoy when I'm in the mood for something different.
